Barolo Cannubi 2007 - Paolo Scavino

Recently, I opened a bottle of 2007 Barolo Cannubi by Paolo Scavino from the Villa Licata cellar — a wine that not only ranks among the absolute top of the appellation but also beautifully captures the unique character of the iconic Cannubi vineyard.

The 2007 vintage delivered wines with warmth, depth, and immediate drinking pleasure, yet with enough structure to continue performing beautifully even today.

In the glass, this Barolo shows a ruby-red hue with garnet highlights. The bouquet is rich and refined, offering aromas of rose petals, dried cherries, liquorice, and tar, subtly interwoven with hints of balsamic, tobacco, and earthy minerality. On the palate, it is silky yet powerful, with elegant tannins and a layered, lingering finish.

The Cannubi 2007 pairs wonderfully with classic Piedmontese dishes such as tajarin with truffle, brasato al Barolo (beef braised in Barolo), or a refined selection of aged cheeses like Castelmagno or Testun al Barolo.

This wine is currently at a particularly beautiful drinking peak, but can continue to evolve gracefully until around 2030, if properly stored. Decanting is recommended to fully reveal its aromatic complexity.
