Chef Sam D’Huyvetter of Restaurant BASK (14.5/20) is a true craftsman. He shines in a kitchen where the product takes center stage, and purity, precision, and layered flavors set the tone. His style exudes passion: a touch of rock ’n’ roll, genuine authenticity, and a pronounced love for top-quality meat, preferably seared over the fiery flames of a Basque asador.

Inspired by the vibrant cuisine of Southern Europe, Sam translates these influences into a modern culinary signature that is both bold and refined. With a focus on pure ingredients, technical mastery, and subtle simplicity, he consistently surprises with dishes that go straight to the heart of flavor.

Experience menu

At BASK, the menu is never fully revealed in advance. The Experience Menu evolves with the kitchen, the fire, and the seasons — and that touch of mystery is very much part of the experience.

What we can already share? It will be a 14-course signature experience, featuring some absolute BASK favorites that may make an appearance at your table.

Think of turbot on the open grill, finished with our own pil-pil: pure fire, fat and salt, as an ode to Basque fish cuisine.

Or an intense tartare of gambero rosso, where the briefly grilled heads are pressed to extract a pure umami bomb.

And for dessert: the BASK Dame Blanche. A classic, completely reimagined with sheep’s milk, warm chocolate with Basque apple cider, smoked hay butter, and a subtle hint of vanilla and balsamic vinegar.
