Chef Ayt Ems began his culinary journey in 1988 at the Michelin-starred Tante Koosje*. Since then, he has built an impressive career in some of the most renowned restaurants, including De Mariënhof*, De Nederlanden**, Brockhorst, and the world-famous D.O.M.** in São Paulo.

Last year, he brought all of this experience together at Nakazu, his intimate, Japanese-inspired restaurant in Antwerp. There, he translates more than 35 years of expertise into a refined kaiseki-style cuisine, where Japanese precision and French finesse flow effortlessly into one another. His approach is rooted in simplicity and purity, with a strong respect for product and seasonality. Each dish is clear in flavour, carefully composed, and elegantly presented—restrained, yet executed with exceptional finesse.
